Bovine Myology
First post, a link to Bovine Myology...I found this site while doing some research on the Eye of Round beef cut. I switched to this cut for jerky just recently and already decided to stick with it permanently. Check out the site, it's very interesting and combines two of my worlds, Tech and Beef.
